CULINARY VACATIONS in ITALY

The Flavours of Tuscany
(Option: Day Cooking Classes)
Tuscany, Italy - 6 nights

Enjoy seven days of authentic Tuscan cuisine with a full immersion cooking course at Toscana Saporita cooking school, situated in the Campomarano Estate. The school’s modern, professional kitchen occupies the ground floor of a 15th century villa. For hundreds of years, this large majestic room was used to house the estate’s fine wines, stored in huge wooden barrels. The barrels are gone, but the terra cotta floors and original wood-beamed ceilings are still with us. Classes involving instruction in bread, pizza and foccacia-making are held next door, using a wood-fired oven that baked the estate’s bread for hundreds of years.  During your stay, you will live above the school, in bedrooms that are charmingly decorated with Italian country antiques.

Your host and founder, Sandra Lotti, is known throughout Italy for her cookbooks on Tuscan regional cuisine. She co-authored with Anne Bianchi, 'Dolci Toscani', the definitive compilation of Tuscan dessert recipes and is a contributing writer for Intermezzo Cook Magazine. Sandra Lotti embodies the essence of the Italian spirit in her warmth, her zest for life and her passion for great food. These qualities, combined with her outstanding skill as an ebullient teacher make Toscana Saporita the perfect place for eager students to learn the art of Tuscan cookery.

The students encompass every level from culinary beginners to accomplished chefs who come to study the unique nature of Tuscan cuisine. Taught by three experienced, professional instructors, all classes are small in size, completely hands-on and conducted in English. No matter which of our three programs you choose, the school’s instructional emphasis is always focused on the same three things: traditional Tuscan technique, innovative use of ingredients, and esthetic presentation. What changes is the seasonality of the food.


Spring Festival classes focus on the wondrous foods that emerge in April and May: wild leeks, new potatoes, spring onions, wild asparagus, succulent shellfish, spring lamb and fresh new cheeses.


Summer Abundance classes are built around juicy tomatoes, fragrant basil, white eggplants, yellow, red and purple peppers, apricots, peaches and melons.


And
Autumn Harvest
programs emphasize mushrooms, chestnuts, truffles, newly-ground polenta and freshly-pressed olive oil. Each course devotes special attention to pairing foods with appropriate wines. There is plenty of opportunity to eat, drink, discover …and simply relax! The food, the fun, and the scenery will be unforgettable!

The package price for each program includes accommodations, lessons, all meals (paired with excellent wines), daily sightseeing tours, taxes, tips and airport or train transfers to and from Pisa airport or Viareggio train station. There are no hidden costs or extra charges.

Your Week in Tuscany

You arrive on Sunday and are welcomed with lunch served on the main lawn. The remainder of the day is yours to settle in, explore the estate and enjoy a delicious four course dinner prepared by your instructors.


Monday through Friday, lessons are held from 10:00-1:00. Classes are small, completely hands-on, and make use of all-natural, seasonally-fresh ingredients. Essential Tuscan techniques you will master include: homemade pasta, ravioli, gnocchi, pizza, focaccia, risotto, bruschette, crostini and other types of canapes, vegetable and grain soups, grilled, roasted, fried and stuffed vegetables, fish and meat preparation, sweet and savory tarts, pastries, ice creams and sorbets.


Lunch is from 1:00-2:30 and features foods prepared during the mornings’ lessons. Each meal consist of three courses accompanied by local wines and served at a formally set table situated on the main lawn.  Like any respectable Tuscan, you will then rest for a while after lunch, perhaps choosing to sun yourself in a comfortable chaise by the pool. Or you might prefer to stroll the grounds of the estate, pausing to pick wild herbs, photograph the hillside panoramas, or even peek in on workers harvesting grapes or pressing olives in the ancient frantoio opposite the school’s kitchen.


Afternoon tours take place from 3:00-7:30 and are led by professional, English-speaking guides who will introduce you to such undiscovered treasures as Lucca (an 11th century walled city surrounded by 3 1/2 miles of perfectly preserved walls), the seaside resorts of Viareggio and Portovenere, and Pietrasanta, famous for its marble works.


Dinner each night is a glorious, candlelit affair featuring four delectable courses prepared by your instructors and accompanied by a variety of excellent local wines. One night during the week, you will be our guest at a famous local wine bar, whose owners will personally prepare an exclusive dinner, each course paired with wines from their incomparable collection. Your Tuscan experience reaches its climax on Friday night at our graduation festival dinner, where you receive a diploma certifying your newly acquired status as an "Authentic Tuscan Cook."

If you do not wish to share a bathroom you may reserve a private bathroom for $200.00 per person. (For Advanced Fundamentals of Tuscan Cuisine Weeks, every accommodation includes private bathroom.)

Single Supplement: For those not wishing to share a bedroom, single occupancy is available for an additional $500.00.

Prices quoted are based on foreign exchange rates and therefore are subject to change.  Your cost is guaranteed once deposit has been received.

Accommodations:  Participants stay in fully-equipped suites in the Toscana Saporita villa. Each suite contains three bedrooms, eat-in kitchen, living room, and fully-equipped modern bathrooms.

Non-participating guest:  The cooking school welcomes friends and spouses who would like to come to Camporomano without taking part in the cooking program. The fee for non-cooking guests is $2,250 for all courses and includes everything except class instruction.
 

A deposit of $500 per person and the completed and submitted registration and release forms will secure your reservation. EXTENDING YOUR STAY

Located in the heart of Tuscany's wine and olive-growing region and only 30 miles from Florence, the school is an ideal base for touring Tuscany. The estate itself offers a wide range of amenities (swimming pool, hiking, extensive grounds and gardens) available to all guests. Those wishing to stay beyond the completion of cooking school can do so at the special rate of 70€ per day for a single or 110€ per day for a couple.

NOTE
: Included transfers are only from Pisa Airport or Viareggio Railway Station. Pickups only on Sunday (arrival day) and drop-offs anytime on Saturday morning (last day of program). 
Arrival information must be provided at least one week ahead of time.  Toscana Saporita is located 15 miles from Pisa International Airport which has direct flights from Rome, Milan and most other major European cities.

Airfare, personal expenses and everything not mentioned in "Included" are not included.

 

 

CANCELLATIONS & REFUNDS

The Toscana Saporita Tuscan Cooking School reserves the right to cancel any course for any reason. If a course is cancelled, all monies will be refunded and such refund will release Toscana Saporita and Passionate Palate Tours from any liability. In order to cancel your registration, you must send written notification to Passionate Palate Tours. Monies paid by you will be refunded less a cancellation fee determined as of the date Passionate Palate Tours receives your written notice. Cancellation fees are:
90 - 75 days prior to course date, monies can be refunded less an administration fee of $ 1,000.
Cancellation less than 75 days prior to course date results in 100% of the amount is not refundable.
